
Stinky Bamboo Shoots is a member of the world famous stinky dishes family in Pu'er.
Chip the bamboo shoots and soak them in water until they turn soft; string them with bamboo splits and air them under the shade of trees until they become stinky and decayed; quick-fry them at a high temperature with local lard, then braise them, and finally put in accessories such as chili and Sichuan pepper.
