Owner of The Haus Jason Dulffield told us that his father and grandfather were in the industry of butchery. Many German cuisine recipes are originated from that time. As family business, most of the numbers of Dulffield family works in the town of Hahndorf, his is also the reason that this family recipe is able to preserved.
