State dinner for Xi features American cuisine with Chinese elements

The White House hosts its state dinner Friday for Chinese President Xi Jinping, and Obamas will honor their guests with both exquisite food and top-notch R&B entertainment.

For the dinner, Guest chef Anita Lo, a Chinese-American chef and former contestant on reality show Top Chef, helped craft the menu along with White House executive chef Cris Comerford and White House executive pastry chef Susan Morrison.

The chefs said they would like to serve guests a memorable menu: Guests will start with a wild mushroom soup, move on to a fish course of poached Maine lobster with leek rice noodle rolls and a main course of grilled Colorado lamb.

For dessert, they'll have a poppyseed bread and butter pudding. Chinese touches include the Shaoxing wine served with the soup and the lychee sorbet that is part of the dessert course. Besides, pumpkin moon cakes were served as well for the upcoming traditional Chinese festival—Mid-autumn festival. The chefs said they used Chinese and American flavors and drew inspiration from autumn.

The dinner will be held in the East Room where tables will be topped with pink tablecloths and roses in several shades of pink, reflecting a central theme of roses, which the White House says demonstrates "a deep respect for both Chinese and American architecture and landscapes."

Afterwards, guests will be entertained by one of R&B's luminaries, Ne-Yo, a GRAMMY Award-winning singer and composer.
