China needs to develop a fast-food industry for its own traditional cuisine, some experts and chefs suggested during the just-closed Fourth National Culinary Contest. The top three winning dishes were Beijing Quan Ju De roast duck, Tianjin Gou Bu Li steamed stuffed buns, and Lanzhou hand-pulled noodles -- all well-known traditional Chinese meals that the experts recommended to be fast-food test items for the Chinese public. Strict requirements in the cooking techniques and preserving methods have prevented China from developing the fast-food industry. But during the culinary contest, experts emphasized that 30 percent of all the entry dishes could pass fast-food official health requirements. They said that China must industrialize its fast-food sector to compete with overseas favorites such as Kentucky Fried Chicken and McDonald's. |
